300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar

Ingredients for the Premix (makes 850ml, enough for 10)

200ml citrus syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch

Instructions

Making the Syrup: Combine the listed items inside a pot, bring to a gentle boil, stirring to dissolve. After that, remove from the stove and leave to reach room temperature fully. Transfer into a clean bottle, seal keeping it in the fridge, where it will keep for about one month.

Preparing the Premix: Pour the specified liquids into one large bottle, leave to sit for 60 minutes, then strain , ideally through muslin, to ensure it's fully clarified.

To serve: Add 85ml from the cocktail base to a mixing glass packed with ice, and agitate lightly for a minute to chill. Filter to a frosted cocktail glass or similar, decorate with a few cranberries adding the final touch by giving it a quick spritz of mandarin oil over the top.
